0 Dice cheese into tiny cubes. Dice onion and place aside. 1 Use a food processor to ground the chicken thighs. Season ground chicken with BBQ sauce and 1 Tbsp of Pork Rub. Mix well. 2 In a heated skillet with melted butter, sauté onion and then place aside to cool. 3 Once onions are cool, combine onions, cheese cubes and seasoned ground chicken together. Form 2 oz meatballs (these were 2 inches thick and I was able to make 10). 4 Wrap each meatball with 1 piece of bacon. Hold bacon on with a skewer or toothpick. Season each meatball with Pork Rub. (see video for bacon cross-fold idea) 5 Preheat smoker to 275°F. Once preheated, place bacon wrapped chicken thighs onto the smoker. Use a meat thermometer to track temperature. 6 Cook chicken thighs until they reach an internal temperature of 180°F. Coat them with BBQ at the 30 minutes and 1 hour mark.View original recipe
