Cheeseburger Tater Tot Casserole

Make Meat Filling
0 Preheat the oven to 350°F. Prepare your 2-quart baking dish with oil or cooking spray. 
1 In a large skillet over medium heat, cook the ground beef with diced onion and red peppers until the beef is browned.  Drain off the excess grease. Turn off the heat. 2 Stir in ketchup, mustard, diced dill pickles, salt, pepper, paprika, and garlic powder. Mix well to combine flavors. Spoon this mixture into the prepared casserole dish and smooth it into an even layer. Make Cheese Sauce
3 In a saucepan, melt butter over medium heat. Whisk in flour and cook for about one minute to create a roux.  [wprm-ingredient text="2 tbsp Butter" uid="11"] [wprm-ingredient text="2 tsp All-Purpose Flour" uid="12"]
4 Slowly whisk in the milk and cook until the sauce thickens, about 5 minutes. Stir in salt and pepper.  [wprm-ingredient text="1½ cups Milk" uid="13"] [wprm-ingredient text="¼ tsp Salt" uid="14"] [wprm-ingredient text="¼ tsp Black Pepper" uid="15"]
6 Remove pan from heat and stir in 1 1/2 cups cheese until it is completely melted and the sauce is smooth. [wprm-ingredient text="1½ cups Cheddar Cheese" uid="16"]
5 Pour the cheese sauce over the top and spread evenly. 
Bake Casserole
7 Arrange frozen tater tots in a single layer over the casserole. (You may have extra tots) [wprm-ingredient text="32  oz Tater Tots" uid="18"]
8 Bake in a preheated oven for 35 minutes.  Remove from the oven and sprinkle the remaining 1/2 cup of cheese over the top. Return to the oven for an additional 5 minutes or until the cheese is melted. [wprm-ingredient text="½ cup Cheddar Cheese" uid="19"]
