Grilled Watermelon Salad

This Grilled Watermelon Salad is a twist on the classic watermelon and cucumber salad, made by grilling the watermelon until it's nicely caramelized on each side. It's an easy side dish to assemble in about 30 minutes and is perfect for a summer barbecue or picnic.

What you need

lb watermelon

cucumber, small

tbsp basil, Lightly Chopped

cup red onion

tbsp balsamic vinegar

tbsp olive oil

oz feta, crumbled

salt & pepper, to taste

You're looking for a bit of char on the watermelon slices. 2 Remove watermelon from the grill and place it in the refrigerator to cool for 15 minutes. 3 Prep salad by slicing cucumber into 1/2 moons and thinly slicing red onion and basil. Drain liquid from watermelon and cut into cubes.
