Summertime Tomato and Cucumber

Tomato and cucumber salad has all the flavors of an Italian summer in a bowl. This salad is best made at the height of summer when the cucumbers are abundant and crisp and the tomatoes are starting to come off of the vine.

0 First gather all of your ingredients and set them in front of you. 1 Next you want to wash your fresh vegetables and dry them off because of you don't dry them off the oil and vinegar won't emulsify properly to provide best possible flavor. 2 Start by coring out the tomatoes and then slice them into round and then into small bite size pieces. Your looking for about a ½' chunk of tomato. 3 Next slice the cucumber long ways and then in half again and then simply lay them flat so that you can chop them into the size you want. Once again similar to the tomato I just chop them into about a ½' piece. 4 Dice your onion and bell pepper, and finally chop the fresh basil. If you don't have fresh basil then please by all means use the bottles stuff but of course I use mccormick seasonings in the bottle. 5 Last step is to place everything into a mixing bowl and mix well but make sure that you don't mix it so hard the tomatoes start to fall a part. 6 Place in the refrigerator for about 1 hour so all the flavors can come together.View original recipe
